Nat's advice ref the sellers pack is good, and I'd also recommend talking to your environmental health team at the council. Evidence gathering is tricky, and there are some machines which are allowed as proof of noise they can install, just recording it on your mobile will not be taken as proof in any enforcement action. Once you go that route, it can become v confrontational, and you are right, there will most likely be a counter complaint. I don't know if Bolton run a mediation service for neighbours, if they do, it's worth trying, even if doomed to failure, it shows willing.
